Fujinishiki brewery is located in Fujimomiya city, at the southern foot of Mt. Fuji in Shizuoka prefecture. It is family owned since it's founding in 1688 and is currently operated by the 18th generation. Fujinishiki have always used ground water from Mt. Fuji which is protected by bedrock from an ancient eruption. The name Fujinishiki came from Yukio Ozaki , Mayor of Tokyo known for donating the cherry blossom trees to Washington D.C. Mayor Ozaki visited the brewery in 1914 and described the red leaves of Mt. Fuji as a rich brocade (nishiki).
