MORIKUNI SHUZO

Brewery: Morikuni Sake Brewery Co., Ltd.

Founded: 2018

They are the only sake brewery on Shodo Island, a small island just between Shikoku Island and the Southern Coast of Honshu.  Here, their sake is produced by a team of three - two women (one of whom is the president and owner of the brewery) who work under the tutelage of a toji from the Tajima Guild.  They strive to pursue research in new technologies such as specialized yeast while preserving the tradition of handcrafted sake brewing. They value individuality and strive to create products with unique characteristics through the use of native ingredients, and by brewing their various brands in the image of Shodo Island.

KAGAWA (SHODO ISLAND)

The One and Only Shodoshima Brewery

The only new sake brewery on the beautiful island of Shodoshima, which floats in the Seto Inland Sea.

Under the guidance of a seasonal toji (master brewer), a group of female immigrants is developing their skills while valuing individuality, utilizing the facilities of the Shodoshima Fermented Foods Laboratory. The brand is being developed under the concept of "Shodoshima, the Island of Fermentation."

They offer a unique lineup that ranges from well-aged sake to fresh, easy-to-drink varieties, aiming to appeal especially to women and younger generations—products that stand out with a distinct identity not found in other breweries.

This small, handcrafted brewery—with no machines—focuses on local elements: yeast collected from Shodoshima olives, rice grown on the island, and a commitment to people and tradition. While preserving the heritage of sake-making, they’re also boldly exploring new ideas—making it a truly fascinating brewery.
