A brewery hidden in a bamboo groove that came to be known as Take no Tsuyu. Rice. Yeast. Koji. Water. Brewers. Nature. Each piece of the puzzle of their sake is sourced locally, from the best source possible, and brewing is all done sustainably and by hand. Take no Tsuyu was named Eternally Best in Japan at the first All-Japan New Sake Competition.

History of Take no Tsuyu

Take no Tsuyu is a historic sake brewery founded approximately 170 years ago, in Ansei 5 (1858). The current representative, Masao Aizawa, is the sixth-generation head of the brewery.

The brewery building on the premises was originally constructed in Taisho 12 (1923) and was once part of the sacred sake brewing site at Tamukai, located in front of the Zuishinmon Gate of the Dewasanzan Shrine. This building was passed down to the brewery and is still carefully used today.

Surrounded by bamboo groves, the brewery came to be known as Ishitsuka Take no Tsuyu. The team, including seasonal toji (master brewers), consists of 21 local artisans, all of whom hail from the surrounding area.

Thanks to the steadfast support of loyal fans, Take no Tsuyu continues to produce sake using traditional brewing methods, while also embracing modern technologies to enhance the craft.
