Since our founding in the mid-Edo period, we have been making sake for over 270 years. The name "Haginotsuyu" was bestowed upon us by the feudal lord at the time of our founding, after the bush clover that grows in clusters along the shores of Lake Biwa. We use high-quality rice from Shiga and underground water from the Hira mountain range (soft, sweet water), and our motto is "sake to be savored, not to get drunk", so we aim to make sake that is mellow, tasty, and has a clean aftertaste that becomes more apparent the more you drink it.
